Sweet and Sour Dipping Sauce

Ingredients:

  • 1/3 cup vinegar (white, apple cider, or rice wine)
  • 4 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 teaspoon soy sauce
  • 2 tablespoons pineapple juice
  • 4 teaspoons corn starch
  • 4 teaspoons cold water

In a small heavy-bottomed sauce pan, stir together vinegar, brown sugar, ketchup, soy sauce, and pineapple juice. Bring to a boil over medium heat.

In a small bowl, whisk together the corn starch and water. Whisk this slurry into the boiling liquid, and continue cooking, stirring constantly, until sauce begins to thicken. Pour into serving dish and chill.

Chef’s Notes:

  • The liquid needs to boil in order for the corn starch to do its thing, but be careful - the thickening will happen quickly.
